Southern Revival: Sam’s Southern Eatery Returns with a Fresh Vision
At 6600 W. Central in Wichita, Sam’s Southern Eatery is making a bold comeback. Under the leadership of franchisee Emanuel Ashiedu, the restaurant is set to bring its signature Southern flavors back to the community—this time, with a renewed sense of purpose and hospitality.
A Second Chance at Success
Sam’s Southern Eatery first opened at this location in 2020 but faced challenges due to the pandemic and closed within a year. Now, Ashiedu is stepping in to give the restaurant a fresh start.
“We’re not just reopening a restaurant,” Ashiedu said. “We’re creating a welcoming space where people can enjoy great food and feel connected.”
Bringing New Life to a Historic Spot
The building at 6600 W. Central has hosted several restaurants over the years, including Marco’s Cantina and Casa Mexicana. The new Sam’s Southern Eatery will occupy the east-side section of the building, offering a cozy dining area with seating for 30 to 40 guests and a spacious patio for outdoor dining.
Ashiedu is focused on transforming this space into more than just a restaurant—he wants it to be a community gathering spot.
“This location has history, and we’re excited to add a new chapter to it,” Ashiedu said.
Southern Comfort Classics
The new location will serve the same Southern comfort foods that fans love, with a slightly refined menu. Expect dishes like fried catfish, shrimp, Po’ Boys, and crab cakes, all made with quality ingredients and bold flavors.
The addition of patio dining creates a relaxed atmosphere where guests can savor their meals while enjoying Wichita’s charm.
“Our focus is on delivering consistently great food and memorable experiences,” Ashiedu explained.
Turning Challenges into Opportunities
After the original Sam’s Southern Eatery closed, the building remained vacant until property owner Sam Eddine attempted to open a new concept, Mama Deaux Southern Kitchen. However, staffing challenges put those plans on hold.
Recognizing the potential, Ashiedu stepped in to take over the lease. With successful Sam’s locations already operating in Wichita’s Amidon district, Hutchinson, and Salina, Ashiedu saw this as a natural next step.
“We saw the opportunity to turn a challenging space into something thriving,” he said.
A Franchise with Deep Roots
Founded in 2008 in Shreveport, Louisiana, Sam’s Southern Eatery has grown to over 50 locations across the U.S. The franchise is known for its generous portions, affordable prices, and authentic Southern flavors.
For Ashiedu, running a Sam’s franchise is about more than business—it’s about building community.
“Food brings people together,” he said. “That’s what we’re all about—creating connections through great meals.”
Looking Ahead
The reopening of Sam’s Southern Eatery at 6600 W. Central is just the beginning. Ashiedu and his brother-in-law, Charles Scott, are already exploring new locations on Wichita’s east side to expand the franchise’s reach.
“We want to make Southern comfort food more accessible to everyone in Wichita,” Ashiedu said. “We’re excited for what’s ahead.”
With its upcoming reopening, Sam’s Southern Eatery aims to become a staple for comfort food lovers. The restaurant’s return is more than a comeback—it’s a testament to resilience, community, and the enduring power of a shared meal.
“This is about creating something lasting,” Ashiedu said. “We’re here to turn this story into a legacy.”
